Gault&Millau is a guide that commands respect in the gastro world. It emerges quietly, unannounced and without “show”. Inspectors arrive anonymously, pay as regular guests and rate the cuisine and the overall experience according to a point system.
That’s why we are delighted that PaB Donau has received a 13/20 rating and 2 caps in the Gault&Millau Slovakia guide .
What does this mean for us?
For us, it is a confirmation that the path we are on makes sense. A modern urban enterprise by the Danube, where the Austro-Hungarian classic has its place, but in a way that belongs to Bratislava today.
It’s not about “having a label”. It’s about making the guest come back because they liked it, it suited them and it made them feel good.

How Gault&Millau rates
Gault&Millau scores restaurants on a scale of 1 to 20, and the best establishments are awarded the symbol of “toques” (caps). They are judged on food, taste, technique, presentation, originality, but also on service, atmosphere and overall value for money.
In the current editions of the guide, hundreds of businesses across Slovakia are evaluated, with only those with higher scores receiving “caps”.
